Buckwheat

Common Buckwheat (Fagopyrum esculentum) is an annual forb native to northern US states (such as Minnesota, North Dakota, and New York) and has also been successfully introduced across North America as a non-invasive crop that can thrive in USDA Zones 3–11 as a cool- or warm-season annual. Reaching a mature height of 2–4 feet with a fast-growing, erect branching growth habit, it features broad, heart-shaped green leaves and produces fragrant white to pink flower clusters. It thrives in light, well-drained soils and is ideal for rapid cover cropping, weed suppression, and summer green manure.
